I changed my own oil but the capacity in the book is confusing. It says, 3L (3.2 qt U.S. liq) oil change w/ filter 4.8 L (5.1 qt U.S. liq) total. I changed the filter and put 5 qts in but the reading on the dip stick is too high. So which is it? Help!

I checked my own manual (2018 GTI) to see the wording.
Based on what I read, I concur with enut. Your good value would be 3L from what I read. The other value of 4.8L is for a dry engine (like first oil addition when new or rebuilt I guess). That is what my own manual says. This means that there is 1L of oil that you can never change! A bit weird but that must be because it is impossible to change the oil from under in these engines.
On my GTI 90, these values are respectively 2L and 3.4L (much smaller engine than yours).

Yeah if anything just siphon some oil out till the it's in the correct markings.
