Will using a 19ah battery in the place of a 30ah battery cause a 12v low warning?

More importantly, will you trust your life to the wrong part when you are 20 miles from shore with no one around, or 100 feet from going over a 20 foot dam because of 5 mph current and your ski won't start?

Last time I checked... your GTX uses a 20 amp battery.

But, no... it won't cause a 12v low if the battery has a charge.
