After 2 hours, bogs down - 2001 Challenger 2000 240EFI

Have owed the boat just over a week, taken it out 5 times. Everytime single time, after about 2 hours of tubing/wakeboarding, the engine starts bogging down and anywhere from seconds to minutes will shutdown and won’t restart for around 5-10 minutes. No warning lights, no temp warning. Any ideas?

check your TPS, check you air temp sensor, jet pump impeller, trigger wires...

Sounds like it's overheating. (EXTREMELY BAD) Have you checked the temp of the water coming out the pee hole?
