2011 gti 130 questions?

hi, I just purchased a 2011 gti and took it out for the first time today and just have a few questions? on the instrument cluster there was what looked liked to be the engine temp but it went as low as 19' and as high as 325'? is this normal and if its not the engine temp what is it? and when i pulled the seat for the first time my rotax doesn't have the nice valve cover that says rotax and 4-tec like ive seen, should i have one? and what do u guys recommend as far as a break in? thanksss

That is the compass gauge , the valve cover is a cast metal kind . And break in is not holding one speed for a long time and not doing much full throttle is what dealer told me and change oil at ten hours.
