The shifter is in the forward position but it is as if has a stretched a cable out.
Is there an easy way to adjust this?

Also there is a brass pin on the cable (or piston) which fits into a peg hole on the left side of the jet. But, it appears as though there is nothing holding it in, so it pops out when shifting.

Are there any exterior jet assembly diagrams available so I can figure out if some retaining mechanism has broken off?

It is missing a nut to hole the pin on the jet nozzle. Go to the "parts" link at the top of the page to see what's missing and order the part at the same time.
