Last weekend I ran through about 12 gallons of gas through my 97 GTX. so I checked the oil tank and I cant really tell that any oil is missing out of the tank. at 3.4oz of oil per gallon I should have used at least 36oz of oil. I should be able to notice that. Also I put new plugs in it before I went out, I checked them when I got back home and they are perfectly clean no sigh of oil on them at all. I'm thing about just dumping some oil in the gas tank just for safe measures. whats the worst that can happen if I have alittle oil in the gas and the injection is infact working..... a fouled plug or two... I can buy a $2 plug but a $950 motor I cant.
I do have to say that the motor has been freshly rebuilt, I dont know how many hours were on it. but the whole boat only has 144hrs

Next time before you go out take a sharpie and mark the oil level on your tank to see ware it sits, if it hasn’t moved after your next long ride then you may have a blockage some where.

You could do a simple test, detach the oil lines from the rotary valve cover, disable your ignition and see if oil squirts from each line, if so, reattach. If not there may be a problem with your injection pump, pump cable, cable adjustment, clogged oil filter, etc. You could just premix and not worry about it.

I also own a '97 GTX, this is my 3rd summer with it. When we bought it the injection oil tank was full. While I don't know the exact number of hours, we've gone through many tanks of gas and have still not used even half the original tank of oil. I have it serviced and winterized every fall by a trained tech. who always does a pressure test as part of his checklist. Our pressure has always been well within spec so it must be getting lub.
Doing some of the checks others mention would probably be a good idea just to be sure, but it's probably nothing to worry about.
