I have a 97 Challenger with a 787 motor just had the carbs rebuilt but the one of the high speed jets are stuck closed. The boat will take off fine but stalls at about 4500 RPMs. The motor is also new but it is a gray motor not a white one will this make a the boat stall at 4500 rpm.
 
If the engine was bought from SBT... then that's why it's gray.

Is the engine shutting off, or just running bad above 4500 rpm?
 
I think this is happening with mine. My point is at 3000 RPM's...also with an SBT motor. I am going to try another set of carbs I have setting on the self. I am fairly sure it is flow issue of sorts. Also, I was able to bring the RPM's just up to the failing point and then gun it and it would carry the RPM's up to 7,000.
 
The motor is running at 4500 rpm but not much more not getting up on plain. very few times it has ran on up to 7500 rpm and plained out but would cut back to 4500 rpms when enter a turn and would not pick back up. I have borrowed a set of carbs from a friend with the same boat that runs just fine and I'm having the same problem nothing over 4500.
