OK when I hook up my leak down tester to put the 8 pounds in, is the air supposed to be leaking through the intake/carburetor?
 
I think you have it wrong. This is not like checking the rings in a car.
You block off the exhaust and intake so the engine is air tight. Then you slowly pump 8 psi into the pulse line nipple and let the engine sit. That 8 psi you put in should not drop in 10 minutes. You are pressure testing then engine to make sure it is air tight, not measuring how much it is leaking out.
 
Gotcha, thought something was up. I guess I need to make a couple plates for the exhaust and intake then.
 
I just use thick rubber sandwiched between the intake and carbs and headpipe and exhaust manifold.
