I bought my 2008 challenger 180 used last summer. It runs great but I'm wondering if i should be able to go to full throttle from a stop without cavitation. This is my first jet drive boat but i would think i should be able accelerate faster.

Second question is about the supercharger, is it true that the bearings should be changed at 100hrs? I have about 75hrs on the boat now.

Yes... you should be able to go full throttle from a stop. BUT... the carbon seal on the seadoo's almost alway leak a little. If you want ZERO cavitation, you will need to change the seal, ring and boot. Also, make sure there aren't any nicks in your impellers, and wear rings.
