The turning issue is probably going to be related to the centrifugal force created with the direction of the crank and output shafts. Turning one direction is in line with the rotational pull of the engine and the other is against it.
The open loop cooling system provides cooling water to your exhaust manifold which travels through fairly quickly, without a regulated thermostat, I'm sure in that 12" or so it travels, it isn't going to pick up that much heat.
The other is your oil cooler.
I don't know where your inlet and outlet temp sensors are and because this isn't a real problem solving issue, cant' devote much more time to the question.
