The engine has been rebiult appox 20 Hours ago and the Ski runs good.
My only concern is that it wont go past 6700 rpm? Ok I still get a decent speed arround 56mph. However the specs say 7200 rpm.I cant see that the compression should be low as its just been rebuit.[Is there anything else I can check besides doing a compresion check? Any advise would be much appreciated

Be sure the throttle cable is allow full throttle to the carbs. Check the full motion and be sure it snaps back to idle position when you let off of it. Check the cable with the engine not running and adjust accordingly.

Thanks I checked the cable and it seems to be adjusted fine?

So I decided to do a compression test to make sure the engine is still good

My readings where 131 psi and 126psi which I think is ok even though I expected it to be more?

Would this be the cause of not getting my max 7200 rpm?

your raves clean..(valves under the black caps, with red dials in middle) Anyway, those motors twist around ur rpm your getting, maybe off by 50-150rpms, which could be constituted for a "tight" tolerance wear ring...
