1996 SeaDoo XP - fuel baffle and carbs?

Just took my like-new condition 1996 XP into the shop. The gas gauge read empty and the red light remained on even though the tank was full. Also, it started bogging down at full throttle - it would run very smooth up to about 90% throttle - then when you peg it, it hits full throttle then dies out back down to 90%, then back up, then bogs out again.

The shop told me it's $1500 worth of work - said it needs a new fuel baffle and 2 new carbs.

First question: is this even a remotely reasonable price?

Second question: I'm mechanically inclined, but haven't worked on an engine like this before - but I have no fear in trying. Are these issues something I could tackle myself?
 
These are things you can absolutely try yourself. 2 new carbs sound a bit much...a rebuild is going to be cheaper. I'm working hard on getting the shop manuals online and once they are I think you shouldn't have much of a problem if you are mechanically inclined.
