03' Sportster 155: Simrad GO7 Conversion for gauges?

All my gauges except the speedometer (which is '03 accurate) are broken on my sportster 155. I'm considering switching to a Simrad GO7 with NMEA2000 adapter.

If I do, are there any suggestions or simple solutions to flatten out the helm to support an inset Simrad? Anybody with experience doing the mods correctly? I've done fiberglass work before and I think it'll look pretty amazing but I'm looking for input. Gauge pics for reference

NMEA 2000 on a 2005 4-Tec SCIC Challenger 180

You can just change out your gauges with new ones that are NMEA200 and GPS based and keep your existing dash.
