Utopia 205 Won't Start

Just purchased a used 2002 Utopia 205 boat. Runs great when it runs. After running the boat for awhile (like 20-30 min) and I turn off the engine, the engine won't turn over. We have to sit in the water for 7-10 min before it will fire. Any suggestions? Is there some kind of exhaust sensor or heat sensor that prevents it from turning over right after shut off? Or is it running too rich?
 
"Won't turn over" and "won't fire" are two different things. Won't turn over implies that the crank does not rotate. Won't fire means that it turns over, but won't start.

To help diagnose your problem, which is it?
 
It just won't fire. Service dept today said they ran it and it was fine. Are we doing something wrong on the water?
 
If you don't know the service history, I'd strongly suggest you change out the spark plugs as a first step. 2-stroke engines seem to eat plugs more than 4-cycle engines. I change my plugs at least once every 2 seasons. Would also be wise to change out both fuel filters as well.
