What is the importance of using ISOFLEX grease when replacing supercharger clutches? Why not just use engine oil to coat pieces when assembling seeing as that is what lubricates everything (clutches, etc.) after the supercharger is installed and working.

The Isoflex NB-52 grease is for the needle bearings (40) and the clutch washers to glide on. It is a synthetic salt water resistant grease.

I bought it directly from Kluber's web site for $20 + shipping, better than BRP at $59.

I don't understand what you mean by "glide on". Do you mean just for assembly purposes or for actual usage.

During usage. You surely don't want those needle bearings heading into the block. A few mechs have told me they do more damage than the ceramic washer pieces if they get in there. Oil would not hold them in place either as you lay them down on the shaft while assembling the SC. :)
