Proper way to do a spark plug check?

So in trying to figure out the issue why my 787 won't go over 5k under load I was was going to do a on the water plug check, what is the best way. Would I cut the motor as soon as it hits 5k so try and run it for a few minutes at 5k then cut the motor. Only reason i ask is because i assume it's just one cylinder/carb having the issue but if I keep running it then would the good cylinder be wet since the throttle was wide open with not enough rpm?
