my 2010 RXTX 260 has a dash light that comes on when I've been riding and taking waves over the front. It beeps and says service needed, and the OPAS light comes on. Once that happens, the off-throttle steering assistance doesn't work.

I assume that means there's a sensor in there going bad that suffers when it's wet. Does anyone know what part I need and how hard it is to replace?

Never heard of an opas sensor. Amount of hr on the ski could be tripping a maintenance message. Describe opas not working.

Ok, I remembered it wrong, it's OTAS not OPAS, but they're both the same thing. There is a steering angle sensor on the handlebar pivot which can have it's magnet come loose the sensor itself can go bad. It sounds like that's what I have going on.

OPAS/OTAS not working means that, steering hard with the throttle off, it's doesn't turn. The OTAS system electronically senses that, and give enough throttle to get steering back. OPAS does the same thing, but by a mechanical linkage. With it broken, you need to hit the gas to make it turn.
