Is there any way to check how many hours a used ski has if no one takeout track?

Yes but you need to have a scanner like CandooPro or BUDS.

Sorry, pardon my naivete....my '96 GTX ski tells me how many hours it has been used right through the console MODE button. One of the pieces of info that comes up is HOURS used, right on the infocenter display.

Did Seadoo do away with that functionality somewhere along the way?

Sorry, you are correct. Only models with the Multi Function gauge will show hours.
