Can someone briefly explain why the exhaust must be cooled? Car exhaust systems are not cooled are they?

no, cars are not cooled by water, but, you dont sit on the exhaust manifold, if it wasnt cooled, there would be like a fire, about 5 minutes after you were on the lake, then the ski would sink, and you would have to dive for your beer

cars have quite a bit of open space under the hood and this is ventilated to the outside air, skis are not. it could be done but would require a ton of aluminum shielding and greatly increase the air flow using a blower fan that runs constantly. that heat has to go somewhere.

why not use the lake water, it's simple and cheaper.

Some coolant and a nice heat exchanger works wonders, doesn't it? LOL

To the OP, your exhaust system will melt if it runs dry.

Automotive exhaust systems are air-cooled, your watercraft exhuast system is inside of a confined hull space with lots of rubber hoses and fiberglass and such running nearby... that why it needs water cooling to keep from melting down or starting a fire!
