no, cars are not cooled by water, but, you dont sit on the exhaust manifold, if it wasnt cooled, there would be like a fire, about 5 minutes after you were on the lake, then the ski would sink, and you would have to dive for your beer
cars have quite a bit of open space under the hood and this is ventilated to the outside air, skis are not. it could be done but would require a ton of aluminum shielding and greatly increase the air flow using a blower fan that runs constantly. that heat has to go somewhere.
why not use the lake water, it's simple and cheaper.

Automotive exhaust systems are air-cooled, your watercraft exhuast system is inside of a confined hull space with lots of rubber hoses and fiberglass and such running nearby... that why it needs water cooling to keep from melting down or starting a fire!
