587 white motor can I use one oversized piston?does the difference then in dissplacement make a difference?one cylinder is 30psi the other 140psi can I just put in new rings and hone the other?

No, you'll have to do them both the same.

Since even your other cylinder is only at 140PSI, they both need to be bored/honed and new piston/rings anyway.

You'll already be in there, why wouln't you want to have a completely fresh top end anyway?
