a little help please

changed out my spark plugs, sea doo is idling high out of water, and in water after riding for a few minutes tried just coasting in the water idling , but it was wanting to shut down / stall. was a battle to get it going back up to speed as it kept feeling sounding like it was wanting to die

When you say "idling high out of the water"...what do you consider high? Out of the water (in air) rpm's should be roughly 3000, in water idling should fall to 1500.

Running on the trailer tells us only that the ski will start...troubleshooting really needs to be done in the water, btw.

Has anything beyond what you described been done to the ski?

When was the last carb cleaning/ rebuild (if ever)? Do you have grey fuel lines (bad)...so many questions...need a lot more info to help you!
 
To eliminate the pre carb fuel delivery system, I like to disconnect the line at the fuel " ON" at the pick up, and then connect the out line at the filter into that removed "on" line...
If that doesn't solve your issues, then it more than likely is carburation...you can also detect carb issues, by opening your pilot screw, 1/8 turn at a time, if that helps resolve your issues, that it needs more fuel than the stock setting, suggests your carb needs to be cleaned, , often that micro filter.
