97 gtx low rpms

I have a 97gtx out of the water runs great in water it runs great for 100 yards then it wont go above 5500 rpms ? Since to try to fix this I have replaced all factory fuel lines, rebuilt the carbs, replaced in carb filters and other fuel filter up frount. Still the same problem ? Also when I gun it the gtx cavatates ? Dose this have anything to do with the loss of rpms ?

Fuel Selector

The fuel selector valve was the worst part, when I redid my fuel delivery system. I first tried cleaning it, when I took the valve apart it was full of green goo and there was a piece of rubber O ring or gasket, when I put it back together the valve leaked, therefore it was drawing air into the system. I would seriously think about replacing it.
