97 787 challenger will not stay at high rpm

HI my 97 787 challenger jet boat just got the engine rebuilt and took it out yesterday. It runs good at low rpm then i throttle it up and it gets on plane for 5 seconds then the engine dies and it turns over hard but fires back up but dies if i throttle it back up. Any clue anyone

when were carb/s gone thru, last? Did you mess with the settings?

Well i have not gone through the carbs I did clean the jets out and turned the high speed out a 1/4 turn thats it.
