91 SP, modified, Loading up on fuel, bogging down?

Hey guys,

David from Southeast Tx here. I've had this old SP since 1993, and have had many many hours of fun on it, fresh and saltwater, beach and the river. I parked it almost 20 years ago because of the exact issue it is still having today.

Some of the back story:
The carburator has been re-jetted to per WestCoast's recommendations long ago. The block was gone through and even bored (30?) over in the very late 90's. SkatTrak impellers have severed us well over the years. It has a Jetinetics cone in the air box/K&N flame arrestor, & a PJS intake grate(s). Depending on the intake grate and impeller, and water temp, it would almost break 60mph at its peak.

I hate for any of you to repeat yourselves, I've read every "bogged down" thread I can find, and have tried just about everything I know, or have read, to try, (aside from going into the block again). But, my goal is to possibly get this thing running again for my kids to enjoy. Today I'm getting 137psi on the back cylinder, and ~132-ish on the front. The fuel system has been freshened up, new plugs of course, voltage looks great, oil system is certainly oiling, It will fire-off and idle very reliably. If you start it and quickly get on the gas, it will take off and run like a champ. But, if it idles for more than 20 seconds, it may try to get up on plane with some feathering of the throttle, but it'll typically bogg down and refuse to proceed far past an idle.

Two things make me think it's loading up on fuel: 1, with the airbox off, when it goes to bogg down, there will literally be a cloud of atomized fuel pulsating just outside the throat of the carburetor. And 2: if I turn off the fuel, it will run lean after a few moments and take off like a rocket for about 5 seconds. If I turn the fuel back on quick enough, it's good to go as long as I stay on plane.

Please, any thoughts? I appreciate your wisdom.
I hate to incur the cost on such an old ski, but I'm tempted to purchase a new carb, move my jets over, and see what happens. Maybe there's something I'm missing in the old Mikuni. At least it's a single.

Wow, What 'mikidymac' explains at the end of the "carbs from hell" thread fills in years worth of gaps in my understanding of the pop-off topic! I've long imagined the diagram & valve were very simply a pressure regulator against the fuel pump, I had no idea there were some many other details. And I had not considered the vibration issue either. This reads like I definitely need to steer my situation more towards the lower end of the pressure range, I was thinking about backwards.
