2000 Challenger running rich, smoking, not starting after running for a while.....

It goes on and on with my SeaDoo. I run it for 45 minutes and then it wouldn't start. Looked at the plugs, which were new, and they were black as all get out. Replaced the plugs, engine started but continues to smoke. I think it is running too oil rich. Is there anything I can do to adjust the mix? I really like the boat but it is starting to drain me as I have had other issues and was told it was good to go this week. Apparently, it is not.
240HP Merc inside.

I had to rebuild my carburetors, im not sure about the mercury engine but I bet is almost the same thing, sorry to tell you but it could be your carburetors, welcome to the club, im learning with my boat, 1. is finicky about the battey, 2. It likes the carburetors to be really cleaned. Maybe somebody can chime in, also I had to remove all the gasoline inside and add fresh gas... lets see..
