Do you still have the oil injection mecanism? Sea-Doo oil injection system is the most reliable system on the market. If you can put it back and working, you will not have to manage the oil/gas mix.
 
Yes, it would be good to start with fresh gas. About oil, as you don't know what has been use in the tank, it would be good to drain the tank, replace the oil filter, fill with new oil and purge the system to remove air. On the oil injection macanism, use the blead screw

You actually don’t need synthetic oil in your ski since it’s a 717 engine. Mineral oil is fine, but it does need to be API-TC rated... The XPS Carb 2T is available at any dealer, or if you want to order your oil and keep extra you can use Amsoil or Mystik JT-4.

If you get tires of premixing it is pretty easy to go back to oil injection.

AND THIS IS A BIG ONE... you have to keep the oil tank and still supply your rotary gear with oil even when using premix. Is your oil tank still in the ski and does it have oil in it?

Yes it’s still in with oil in it
