temp gauges

Does any one know if I can install temp gauges on a sportster 1800, will the sending units work with the gauges. I read on a different thread that the sending unit work as either open when engine cold and closed when it reaches the 200 degrees or so and sends a signal to the warning beeper. I know that most sending units work as a variable resistor, the hotter it gets the less resistance thereby displaying it as such in the gauges. So if the original seadoo sending unit works on the principal either open or closed, the gauges since there's no increasing or decreasing signal probably won't work, anybody have any input on this.
