Spark Plug reading ?

I recently replaced an engine in my 92 GTS and was getting a plug reading on the plugs using the Plug Chop method. I started with a new set and was tweaking the High Speed screw and reading the plugs. I got them to a nice reddish brown. I feel like that's on the rich side, and next time I plan on making it a bit leaner.
My question is: once the plugs darken from running rich, will they ever turn white after you change the carb settings or will they be forever stained?

Also, I noticed that the cylinder jugs were very hot to the touch, while the exhaust pipe was leuk-warm. The ski was doing it's thing, peeing out of the two holes in the back, but I still feel like the engine was hotter than usual... I couldn't keep my hand on the jug more than .5 second. is this normal?
 
New engines run hot. If it didn't burn you... it's probably OK.

Post a pic of the plugs, and I'll let you know if they look good... but a light brown is fine.
