97 XP. Does the oil pump need to be removed or just cap off the lines. Should I also remove the oil pump cable from the Carb?

You'll need to remove the oil pump because the pump gets its lubrication from the oil that its pumping.

Why do you want to remove the oil injection system? It's a very reliable system and if you remove it you will need to premix, you'll use more oil, and the ski will smoke more. The disadvantages far outweigh the advantages.

If you do remove the oil injection system you'll need to leave the oil tank in so the rotary valve gear gets lubrication.

There are two lines that look to be going to the rotary gear. One coming from the gotten of the oil tank and one coming from the top. The one coming from the top looks to be empty like no oil is coming through. Also, it is connected to a t fitting on top of the oil tank and one side of the t is missing a line. What all does that t feed oil to?

That empty tee fitting you see is just the check valve -- only has hose on two of the three ports. (It's an air valve to allow pressurization.)
