I don’t know that we have enough information to give you good advice, or understand why you don’t have oil showing on the dipstick after adding 5 quarts. regardless of What model Seadoo you own, 5 quarts should be seen on the dipstick.

follow the owner manual for checking oil and get your oil level in between the high and low marks on the dipstick before you run your ski for any longer than a few seconds. Very low oil or high extra oil could damage your engine quickly.
 
The 4-tec appears to be an expanding oil system (from my own experience) just like a Harley that uses an expansion type reservoir/ tank. The 4-tec will generally show a low reading on the dipstick cold and normal check is done after being run to normal temp and then shut down for just a few minutes. Same-same.

Could your dipstick be broken off or switched with the wrong one? I would cut a piece of STRAIGHT coat hanger, a few inches longer than the dipstick, and insert to check where the oil level really is. Just my opinion and that can be used for any gas motor or automatic trans in general that has a crankcase.
