I was wondering what would be a good impeller for a 96 Jet Ski for me to gain more power and speed?

The ski is 12 years old. I don't know how much more you think you can gain, but if any, won't be worth all the money you'd have to put in it. You can get a modded impeller from Solas for about $250 bucks or look into the RIVA stage kits, they have 3 different kits that change exhaust, intake, impeller and carb jets.
If you change degree of the impeller alone, then you know that your gonna get it one way or the other. More pitch, better top end speed, slow out of the hole. Less pitch, more speed out of the hole, but no top end......:cheers:
