Also, you would get more answers if you posted in the proper section. a) you have a boat, not a PWC, so put your questions in the boat section. b) you aren't having "Trouble" in the initial question. So put it in the general section of the boat forum.
Now... to give you an answer:
Yes, your ride plate is the plate extending under your pump. It controls the attitude of the ride. If you push it down a little, the nose will drop in the water at high speed. If you lift it... it will come up. Some people like to run an extended plate, for more control... or bolt on a plate with chines in it, to help the ski hook up in a corner.
Drifting under power is normal. You have 2 engines spinning the same direction, so you are fighting torque. Your steering problems is the same thing.
