97 Gtx carb adjustment

So I need help with adjusting my carbs. I have a 97 Gtx 787 motor. Rave valves are cleaned out, the red caps on the valves are all the way down. The fuel lines have been updated and the carbs have been redone. Here is my problem: when I pull the gas full throttle it bogs down and sounds like its going to die so I release the throttle and let it idle again. Then I will ease into the throttle and once it get up to higher speeds it does great. Sometimes when I'm idling it will quit or when I'm idling and give it throttle it will quit. But it starts right up. What do I do? If I need to adjust it how do I go about doing that when I'm on the water and where are the screws to adjust it?
