2011 GTI seat for taller person

I always felt like I was cramped on my boat. I have the touring seat, so it has a lower part for the driver, and higher part for the passenger. I always wanted to have about 2-3 inches of the higher part taken out so I could scoot back further... My 2011 gti seat cover is finally starting to get a little ratty looking. So I was looking to re-cover it, but before I do that, I was interested to see if anyone had any ideas on a seat for a taller person.

Take it to an upholstery place. I know we have a guy where we are he does all the padding and wrapping I'm sure it's not hard to cut the foam back or just use less in the back of its all being redone anyways.
