I have a 2005 challenger 180.

The only gauge that will light up is the fuel gauge. But it will not register any fuel level. All other none gauge lights/radio work.

All fuses checked.

No audible beep when putting key/lanyard on the post. No response from pressing ignition button. No sound, it doesn't attempt to start. Battery fully charged.

There doesn't seem to be a fuse for the ignition or the rest of the dash gauges?

Anyone have an idea what this problem could be?

Sounds like you either have a bad battery or a bad connection somewhere. Start by having the battery load tested as just checking the voltage with a meter is not enough. It may have a surface charge, but hold nothing under load. If it checks out OK you will have to start checking all your power and ground connections for corrosion.
