2003 185 Utopia 250HP OptiMax - Fuel/Engine issue?

Hello I am new here and just recently bought this boat. I like it alot always wanted one for my own. I consider myself pretty handy and able to fix 95% of the things I get my hands on. This one has me questioning maybe what the issue really is.

So Engine runs and sounds fine. Had it in the water and everything seems to go smooth until you attempt to push the throttle past the half way mark. It will get to plane just fine and cruise however occasionally it will "sputter" and just lose power for a moment. If I push any further past the half way mark it will lose all power and just completely die or lose all forward momentum.

My thoughts. (Mind you I was informed the fuel pump was replaced and there is a new Fuel pump serial number so it is assumed that, it was replaced. Now I do not know if that was both of them or not.)

Fuel Lift pump has taken a poop? Fuel lines are old and need some TLC maybe replacement, Spark Plug cables are old and need some replacement. (I have checked all the spark plugs and they are no more then a year old and are the correct kind/gauge). So my thought other then maybe some old fuel is the lift pump was not replaced and needs to be R2'ed. But it could be something else that I am not aware of. Anyone have any suggestions. (Before you say just sell it and move on I got it for dirt cheap and if I have to put a few hundred bucks into it, I don't mind). Any help would be awesome.
 
Circled in Blue, the part number will by on it. Its very similar to an oil filter, I used an strap wrench to remove and install the new one. Probably can you an oil filter wrench too.

Awesome thank you. They also list a small Fuel fitter in that diagram it is "a" do you happen to know a part number for that or know where I might find those part numbers?
