1998 Challenger -- condensation / bad wires?

Newbie on the forum, hoping someone can help! I've been having a problem starting one engine, no issues with the other. I had the carbs rebuilt prior to the season. Fuel is getting to the plugs and there is spark. Someone had mentioned that it may be condensation on the wires. What I did this week-end and it worked 3 days in a row. In the morning I would go down to the boat and try to start it, one engine fine, the other just turns over. I leave it for an hour wih the lid open, then try it and it starts first try, no problems. Then throughout the balance of the day no issues, could have it shut off for hours, go to start it again and it starts no problem, there is no performance issues either, just the initial starting. It seems to be only a problem starting when sitting overnight. Any thoughts on what the issue could be?
 
Sorry, I am not a mechanic so need some help understanding, hoping you can explain....,seems odd as I did have the carbs rebuilt prior to the season starting??...., what would replacing the needle and seats do?
 
Needles and seats aren't replaced during a rebuild unless you ask, they leak and cause hard starting issues.
