03 GTX 4Tec Check Engine?

I bought a 03 GTX 4 TEC this winter. I took it out for a ride a month ago and it ran like a charm. I changed the oil and filter according to the shop manual. Instead of getting 3 qts out of the engine I only got about 2 qts. I put in 2 qts ran the ski then checked level. It was a little low so I added 1/2 qt more. Ran it again and check and the level was about 3/4 up the stick where the dips are. Took it out and about 30 min got the check engine signal. We let it sit for about 2mins and drove it back to shore. All looked well. Ran it again for 20 mins got the check engine signal. Let it sit for 2 mins drove it back to the docking area. Checked the oil it looked a little high but it was warm. I restarted and ran it the rest of the day no problem. The shop manual said to check the P codes and nothing came up.
Can anyone give me any ideas?

One last thing. The water Temp sensor is now showing the water temp about 100F. That was working right the 1st trip. Just wondering if this was my problem or if this was something else to look at.
