I have some Pod Filters and another set of carbs that came with them on a 787 engine I purchased. Would this offer a performance increase to stock carb air set up? I'm not of fan of water being able to get into the engine so easily so I never used them on anything. LOL

If it's a stock engine then no, really no performance increase. If you were running a pipe then the stock airbox becomes too restricitve and the AM filters are needed.

I used an R&D filter on my XP 951 for about 14 years. I DEFINITELY ran better! To find out I removed the air box and ran if for a few minutes and there was a noticeable difference. I never had any water ingestion issues with it. It also made the engine easier to work on! Just my two cents.

I hope you rejetted the carbs with the AM filters.
