This is a general question about any jet ski cooling system.
In a car the coolant is kept at about 15 psi. So the coolant boiling point is higher.

In a jet ski is the coolant in the engine under any pressure at all. Maybe by restricting the flow output?
How does this work?
thanks.

You have an open cooling system always being supplied by cool water so no there is no way it could boil so no need to keep it under pressure to raise the boiling point.
