96 XP 800 plugs fouled with oil after high speed shutdown

We need more of an explanation. Did you do a plug chop correctly with brand new plugs?
Any running issues?
Pictures of the plugs?

Not new, plugs were used the previous season. Gap is to spec. Ski started up just fine, but did seem to produce more white smoke than expected while idling out of marina. Acceleration was very quick and smooth, no hesitations or bogging at all. After running nearly full speed for about 30 seconds I shut down to idle, engine stropped and would not restart even after multiple attempts with a minute or two between attempts. Once I got home I pulled the plugs and they looked normal (?) See pics. Re-installed plugs and ski started up on trailer with no problem.

I don’t think it’s fouled plugs. Check your compression
Will do. A little history on the XP 800. It was sitting in a garage for the last 10 years and I managed to acquire it for free. I have since replaced all the old grey fuel lines, oil and gas filters, selector switch and battery. Also drained and cleaned out both tanks. Rebuilt carb using genuine Mikuni OEM parts. Also set pop-off pressure per spec. Since it started and ran excellent during acceleration and high speed, I figure all the carb adjustments are okay. Will check compression as that is something I have not done. I also just noticed that the oil injector alignment setting is off a little, so that needs to be done as well. Would that cause the excessive white smoke while idling?
 
excessive oil shouldn’t cause white smoke, I would think the white smoke would be more apt to be from water getting into the combustion chamber, but maybe it’s just from getting to much oil. I can say that I’ve ran pre mix besides the oil injection and it will smoke upon start up, but once it’s fully warmed up, there’s no smoke even with me doubling up in oil, so I don’t think it’s smoking due to excessive oil

Checked compression and they are reading 155 PSI on both cylinders. Checked without adding any additional oil to upper cylinders.
 
Well that’s perfect compression. So you got this for free, changed fuel lines, replaced selector valve, rebuilt carb. Took it out and ran great? You ran it at full throttle for 30 seconds and… this is were I’m not sure what happened next, did you throttle it down or did it stall? And then it wouldn’t start again on the water, but would start in the trailer
 
So you were running it full throttle and it died? Or you throttled down? It wouldn’t start on the water? But it started on the trailer?

Ran full throttle and then quickly throttled down to idle and then shortly after that it died. tried restarting for about 15 - 20 minutes and then gave up. It now starts up fine on trailer.
 
Would throw a set of plugs in to and run it again and see what happens. Plugs will act funny it’s cheap test to see if if runs better
