95 SPX - Strange start condition after its warmed up

Hey Folks. I have a 95 SPX that I brought back from the brink. Not much to look at, but it runs well. When I first got it I rebuild the carburetors, new fuel lines, new fuel selector, new wear ring, etc. I got it running pretty well. Here is the thing. First startup off the trailer, runs great, no issues. Stop for a while (getting a cold beverage, taking a break, whatever), then get back on, and now it takes a bit of cranking to start, and if you roll throttle you bog it down and it stalls. If you feather and baby the throttle some (like for a minute or two), it eventually allows you to throttle up and then continues to run normally. Here's the new observation. So yesterday after running around for a couple of hours, I put it back on the trailer. After I get off the ramp, I give it a quick start to blow out any remaining water. Instead of just a small bit of water that normally runs out, a big glut of water shoots out the back! Is there somewhere in the exhaust that water could collect? It occurred to me that this bog when you stop and restart could be due to some additional back-pressure from water collecting somewhere that needs to be blown out, and at low RPM the engine lugs to the point of stalling until you work that additional water out of the system. Any ideas of why this bog is happening, or how to resolve? May just be something I will need to be aware of and live with. Thanks in advance for replies.
