Can someone tell me what MAINT flashing on the MPEM means? Once the ski starts it goes away. Is this normal and I'm freaking out?

It's normal and it means it's time for the normal dealer maintenance schedule. I have the same ski and I believe the MPEM uses a timer in hours to set the “MAINTENANCE” light to turn on.
How many hours do you have on your ski? You can just push "MODE" on the handlebar pad and scroll through the settings to view the total hours.
From memory, I believe you could hold the “SET” button down for 3 seconds to clear it.

50 hour reminder and it's the info center not the mpem that gives this warning.
It's a combination of mode and set buttons for a duration to clear it. I just don't remember the sequence but I think it was either in the service manual on on here that I found that.
